Ingredients:  
1 TB extra virgin olive oil
2 small garlic cloves, minced
1 " piece fresh ginger, peeled & minced (1 TB)
1 small red onion, peeled & finely diced
28 oz can plum tomatoes
1/2 cup red wine vinegar
1/4 cup honey
1/4 cup firmly packed brown sugar
1/2 tsp ground ginger
pinch of ground cloves
2 cinnamon sticks
2 whole star anise

Directions:
Directions:
Heat in a medium saucepot over medium heat, add oil, garlic, ginger & onion & saute until translucent.

Add tomatoes, breaking them up with a wooden spoon.

Add vinegar, honey, brown sugar, ginger, cloves, star anise & cinnamon.

Simmer, stirring occassionally, until tomatoes have dissolved & liquid has evaporated - 60 to 70 minutes.

Remove & discard Star Anise & cinnamon sticks before serving.
