12 medium russet potatoes
1 to 2 sticks of butter (Not Margarine)
1 (16 oz) container sour cream
8 oz monterey jack cheese, shreadded
milk
ranch dressing
salt and pepper to taste
1 cup sharp cheddar cheese, grated

Directions:
With a knife jab each potato 2 or 3 times to release the steam and cook about 1½ hours at 300º until soft. Remove from oven, split potatoes length wise and spoon out potatoes leaving about ¼ inch of potato next to skin. Mix remaining ingredients. Taste and adjust seasoning to your liking. Add a little ranch dressing (or milk) if you need it to get the proper consistency. Put potatoes back in skins and bake at 350º for 30 minutes. Sprinkle cheese on top for last 10 minutes.

I have had these with chopped chives, bacon bits and other ingredients. Do as you like or be inventive. I personally like them as the recipe states.

Once when Nancy was cooking them, she forgot to jab them before putting in the oven. I took the first one out and as soon as I got it out of the oven, it exploded in my hands. Potatoes were all over me and everywhere else. It didn't really hurt me, but I don't want to do it again. It was hot so don't forget to jab them!
