2 - 6 oz. jars marinated artichoke hearts, drained
1/4 cup balsamic vinegar
2 TB chopped fresh chives or green onion tops
1 TB fresh lemon juice
1 TB coarse grained Dijon mustard
2 tsp honey
5 TB mayonnaise
1/2 cup extra virgin olive oil
12 cups torn romaine lettace
1 small red onion, sliced
2 cups cherry tomatoes, halved
fresh grated Parmesan Cheese

Directions:
Directions:
Mince artichokes in a food processor. Add next 5 ingredients & blend

Transfer to a large bowl & whisk in mayonnaise until smooth.

Gradually whisk in oil until smooth.

Cover & chill atleast 30 minutes

Combine lettace, onion & tomatoes in serving bowl. Toss with just enough dressing to coat.

Top with any left over artichokes & more Parmesan cheese
