Ingredients:  
Heat at low temperature until chocolate melts:
12 ounces chocolate chips
2 tablespoons instant coffee powder
2 tablespoon sugar
2 tablespoons water
1/8 teaspoon salt
Cool

Add:
7 beaten egg yolks
1 teaspoon vanilla

Beat:
7 egg whites until stiff
fold into chocolate

Mix:
crushed chocolate wafer with 2 tablespoons melted butter

Spray an 8x8 pan with Pam. Sprinkle a thin layer of chocolate crumbs in the bottom on pan. Add 1/2 of the chocolate mixture. Add a thin layer of cookie crumbs. Chill 1 hour. Add 2nd later of chocolate and top with crumbs. Chill another hour. Serve topped with whipped cream.

This recipe is from the Shed in Santa Fe, New Mexico. No trip to Santa Fe is complete without a stop at the Shed. I can't count how many pieces of Mocha Cake I have eaten with family and friends at this famous restaurant.
