1 cup chopped red bell pepper
3/4 cup chopped yellow onion
1/2 cup chopped celery
1 TB peanut oil
1 TB flour
1 pound boneless chicken thighs, cut into 1/2" pieces
2 cups fat free , low sodium Chicken Broth
2 TB no salt tomato paste
2 garlic cloves
1 tsp dried thyme
1/2 tsp salt
1/2 tsp hot pepper sauce
1 - 10 oz bags each of corn & lima bean (& okra if desired)

Directions:
Directions:
In large Dutch oven, sprayed with PAM, over medium heat add peppers, onion & celery.

Cook 5 minutes then add oil

Toss chicken pieces into flour then add to the pan & cook until lightly browned.

Stir in broth & bring to a boil. Cook until slightly thick - about 1 minute, stirring constantly

Add remaining ingredients, cover & reduce heat & simmer for 30 minutes
