3 tbsp. mayonnaise
1½ tsp. yellow mustard
Salt and pepper to taste
¼ tsp. lemon juice
3 hard boiled eggs, coarsely chopped
1 tbsp. minced green onion
1 tbsp. chopped celery
May add red pepper to the egg mixture or top sandwich with tomatoes

Mix first four ingredients. Stir in eggs, celery, and green onion; red pepper if desired. Serve on bread. I like to toast the bread. I do not top the sandwich with diced tomatoes.
