Mo's Seafood Casserole Recipe

1 pound of cooked shrimp
1 pound cooked crab
1/2 cup butter
1/2 cup flour
4 cups milk
2 tsp salt
1 (6 oz.) can mushrooms, drained
1 TB celery flakes
1/2 cup black olives
1+1/2 tsp chopped green pepper
1+1/2 tsp chopped pimiento
4 cups grated cheddar cheese
1/3 cup green onion

Directions:

Preheat oven to 350º

Melt butter in small saucepan. Stir in flour & remove from heat. Add milk & stir to make a smooth mixture. Return to heat & cook until smooth & thickened

Season with salt.

Add mushrooms, peppers, onions, pimiento, olives & celery flakes. Mix well

Gently stir in shrimp & crab

Add 3 cups of cheese & cook over very low heat until cheese is melted.

Turn into a shallow casserole dish & sprinkle with the remaining cheese over top.

Bake 25 to 30 minutes

Can be made ahead & refrigerate until ready to place in oven
