1 can (28--oz) Whole Tomatoes (San Marzano is a type of tomato grown in volcanic soil in the small town of San Marzano sul Sarno, near Naples, Italy, in the shadow of Mt Vesuvius. They make the best tasting sauces. Look for CENTO "San Marzano" or, REGA REGA D.O.P. San Marzano brands).
3-4 oz Tomato Paste
2-3 TBS EVOO
4 TBS chopped Fresh Basil Leaves, or 4 tsp Dried Basil
3 tsp Dried Oregano
2 1/2 tsp sugar
1 tsp minced Garlic
2 tsp Kosher salt

1. In a medium bowl, combine the tomatoes (hand-crush them first or, use a potato masher), including the juice from the can, the tomato paste, EVOO, basil, oregano, sugar, garlic and salt.

2. Mix well. Taste and add more salt if needed.

3. Use immediately, or store in a tightly covered container or jar with lid for up to 5-days, or freeze for up to 2-months.

4. Bring sauce to room temperature before using.

Good flavor and homemade. Why buy store brands that have far too much salt? This is my go-to sauce for pizza. I never cook my sauce; after-all it's in a 550F oven, so it gets cooked! Also, I leave my sauce a little chunky. Tomatoes not overly squeezed.
