Stuffed Cornish Hens Recipe

2 or 4 Cornish Hens

1/2 cup slivered almonds
3 TB finely chopped onion
1 large can mushrooms, drained
1/2 cup raw rice
1/2 cup wild rice (Uncle Ben's Wild Rice)
3 TB Butter
2 cups water
2 bouillon chicken cubes
1 TB lemon juice
1 bay leaf
1 TB salt
2 slices bacon, cooked crisp then crumbled


BASTE ON HENS:

1 stick of butter
3 TB soy sauce
3 tsp Paprika

Directions:
Directions:
Preheat oven to 375º

Saute almonds , onions, mushrooms & rice in butter.

Add all the rest of the ingredients except the bacon.

Cook until liquid is gone (about 14 minutes)

Mix bacon in the last minute.

Stuff the hens with this stuffing

Bake for 1+1/2 hours - basting every 15 minutes
