1 cup Arborio rice
3 strips bacon
3 cups water
1 tsp salt
1/4 cup olive oil
6 cloves garlic
1 cup chopped onions
1 cup chopped tomato
1 cup sliced okra
1 tbsp tomato paste
1/2 tbsp black pepper
1 tbsp salt
dash crystal hot sauce

Directions:

Fry bacon until crisp in deep frying pan. Remove and save. Lightly fry rice in bacon pan with grease for 3 or 4 minutes. Remove to another pot. Add 3 cups water, 1 tsp salt and 1 tsp olive oil. Cook 10 minutes strain and save both the water and the rice. In bacon pan add remaining olive oil, onions and garlic and cook for 5 to 10 minutes on medium heat. Add reserved rice, tomato, okra, tomato paste, pepper,1 tsp salt and 1 cup of reserved liquid. Stir cover and cook another 5 minutes to absorb the liquid. Add 1 more cup of reserved water and continue on medium for another 5 minutes. If dry add remaining water and continue cooking for 5 more minutes. Final dish should be moist but not soupy. Add remaining salt if necessary. Sprinkle bacon bits over top to serve.

Leffy and I went to school from kindergarten to High school together. Leffy beat me in every class from kindergarten to graduating high school. In high school geometry Leffy and I went through the whole year without missing a question. On the final exam, Mrs Wyndham gives us a bonus question. I got it and Leffy didn't. It was not a big deal for Leffy, but it was huge for me! I have never been so proud. I can still remember the question!

I use this dish with my Osso Buco. It is perfect. I do it earlier in the day and reheat it. (or the day before)
