1/2 cup sugar
1 lemon rind, grated
1/2 tsp nutmeg
1/2 cup melted butter
2 cups (plain) bread crumbs
2 cups cooked rhubarb

Directions:
Directions:
Cook rhubarb with some sugar until soft & set aside

Preheat oven to 350º

Combine sugar, lemon rind & nutmeg

Pour melted butter over bread crumbs.

In a buttered baking dish spread 1/3 of the crumbs then 1 cup stewed rhubarb.

Sprinkle with half of the sugar mixture

Repeat layers, ending with the dry crumb mixtureBake for 40 minutes

Serve hot with heavy cream or ice cream
