¾ c flour
1 tsp baking powder
2 tsp cinnamon
½ tsp nutmeg
¼ tsp salt
¼ tsp ginger
3 eggs
1 c sugar
⅔ c pumpkin
1 tsp lemon juice
1 c walnuts, chopped

Filling
1 c icing sugar
4 tbsp butter
6 oz cream cheese
½ tsp vanilla

Roll
Beat eggs and sugar. Stir in pumpkin, lemon juice and walnuts. Bake for 15 minutes at 375º F on cookie sheet lined with parchment paper.

Filling
Combine all ingredients and beat until incorporated.

Assembly
Once the roll is baked and cooled, spread the filling on the roll and then roll it and wrap in plastic wrap for storage.
