1 small slice country ham
2 tbsp bacon grease
1 med onion, chopped
1 stalk celery, chopped
½ green bell pepper, chopped
1 cup long grained rice
1 (15 oz) can chopped tomatoes
1 tbsp Worcestershire sauce
¼ cup water
2 or 3 dashes tabasco
salt and pepper to taste

Chop ham and cook in heavy pan until crisp. Add bacon grease, onion, celery and bell pepper; sauté until tender. Stir in rice and remaining ingredients. Cover and simmer for 20 minutes. Do not take lid off. Remove from heat and let sweat with lid still on for ten minutes.

Kelly was a cook at one of my dad's restaurants before I was born. As a teenager I worked at a grocery store and would have lunch at Kelly's diner. I would brag on his food and he would always give me big servings. Kelly would tell me stories about my dad. My dad died when I was six and I knew only what my mom told me. I looked forward to lunch at Kelly's.

This is not Spanish rice; it is red rice, a low country staple.
