1 lb fresh green beans, ends clipped and strings removed
3 slices bacon, fried crisp and crumbled. save about 2 tbsp bacon grease
¼ cup chopped onions
3 or 4 medium mushrooms sliced
1½ tbsp sugar
1 tsp dried thyme
salt and pepper

Directions:
Cook green beans in salted water until just tender, about 8 minutes. Meanwhile sauté onions and mushrooms in reserved bacon grease. Stir in sugar, thyme and salt and pepper to taste. Put green beans in bowl; pour onion, mushrooms mixture over beans and top with crumbled bacon.

This is my "go to" vegetable. Especially in the summer when the green beans are so fresh and tender.

I don't think people know the importance of putting sugar in a vegetable dish.. It brings out the flavor. I tend to put in a lot. Nancy says I should put in about ½ of what I do. Try it both ways and see what you think. If you like it, try it with other vegetables. I do it with English peas and Broccoli.
