1 3/4 C nonfat plain Greek yogurt
1 3/4 C low-fat plain yogurt
1 C low-fat milk
1/3-1/2 C sugar (I use 1/3)
3/4 C fresh squeezed lemon juice (or other citrus)
1 T chia seeds (optional)

Directions:

Dump everything in a mixing bowl and whisk it together until smooth. Pour into the ice cream maker while it is running, and let it mix until it is at the preferred consistency.

And then ya just eat it!!!

It doesn’t get to complete ice cream consistency. I put it in 4 or 5 individual Tupperware-ish containers with lids and keep it in the freezer. My favorite consistency is about 30 minutes after it goes into the freezer - it is just perfect then (30-60 minutes). Unfortunately, after that time, it gets very hard, so when you go to eat it the next day or later, you have to do a little “defrost” or “reheat” in the microwave so that it starts melting, just a bit, and then you smush it all around. (That is a technical chef’s term!)
