1 1/4 C Freshly squeezed Lemon juice (5 to 7 lemons), divided
2 TBS Kosher Salt
2 TBS granulated Sugar
1 1/2 C good Vodka, such as Grey Goose
6 TBS Sugar Syrup (purchase from BevMo or, make your own--see how below).
1/4 C Italian Limoncello liqueur
1 1/2 C cold sparkling water, such as San Pellegrino or, regular Club Soda works, too.

Thinly sliced Lemon rounds for garnish on the glass

Directions:

1. For the salt-sugar rim on the glasses, pour 1/4 C of the lemon juice in a shallow bowl. Combine the salt and sugar on a small plate; mix well.

2. Dip the rim of the glass first in the lemon juice and then dip them lightly in the salt-sugar mixture. Set aside to dry.

3. Combine the vodka, 1 C of lemon juice, sugar syrup and limoncello in a large pitcher. Place pitcher in the refrigerator to chill for about 2-hours before serving. Just before serving, pour in the sparkling water and stir.

4. Fill each glass with ice. Pour the cocktail mixture over the ice, garnish each drink with a slice of lemon, serve ice cold.

SIMPLE SYRUP: Combine 1 C sugar with 1/2 C water in a small saucepan, bring to a boil, and cook until the sugar dissolves. Cool. Put in a squeeze bottle for easy use.

Refreshing, Summer drink that hits all the right notes. The original, Tom Collins recipe came from London, in 1874, though New York has claimed the fame, too; both used Gin, not Vodka. Though it's real origins are clouded, the cocktail has been a stable of American parties for decades. Next time you are at your favorite bar, ask the bartender to mix one up. See if he/she uses Gin or Vodka....
