1 pint sour cream
1 small can diced green chilies
3 cups cooked rice
½ cup Monterey Jack Cheese, shredded
⅓ cup grated Parmesan Cheese

Directions:
Directions:
Mix sour cream and chilies. Layer rice sour cream and chilies and Monterey Jack cheese. Repeat and then top with parmesan cheese. Bake 20 to 25 minutes at 350º.

If you've never tried this, DO! If I ever had a Mexican restaurant, I would serve this to everyone. I don't know anyone who doesn't love it and it is so easy to make.
