1 package or bottle of a citrus/lime type marinade
4 boneless chicken breasts
SAUCE:
3/4 c. mayonnaise (low-fat is fine)
3/4 c. sour cream (low-fat is fine)
6 T. Salsa
3 T. Milk (low-fat is fine)
3 t. cajun spice
3/4 t. dried parsley
3/4 t. tabasco (or other) hot sauce
1/2 t. dried dill weed
1/2 t. cumin
GARNISH:
1 c. shredded colby jack cheese (or cheese of your choice)
Sliced lime pieces
Tortilla strips (or crumbled corn chips)

Directions:
Directions:
1. Marinade chicken in the marinade all day or overnight. I just throw frozen chicken breasts in a large baggie with it.
2. Mix all of the "sauce" ingredients and set aside
3. Grill chicken until done.
4. Spoon some sauce on the bottom of a 9x13 baking pan.
5. Lay the cooked chicken breasts on top
6. Spoon a bunch of sauce onto each chicken breast. Reserve the rest of the sauce in a bowl for extra at the table.
7. Sprinkle cheese onto each breast.
8. Place in oven for 5-10 minutes on a low heat setting to melt cheese. Or place on "broil" and watch closely.
9. Serve on a bed of Mexican Rice and garnish with lime squeezed over it and tortilla strips.
