1 cup cooked grits
¼ cup hot milk
3 tbsp shallots, finely chopped
1 tsp salt
4 egg yokes
1cup, freshly grated sharp cheddar cheese
4 egg whites, stiffly beaten

Directions:
Directions:
Combine grits, milk and salt in a medium bowl. Beat egg yokes until thick and lemon colored. add yokes and cheese into grits mixture. Fold in egg whites and pour into a 1 quart oven proof or soufflé bowl. In a 350º preheated oven place bowl inside of a larger cooking dish. Pour in 1 inch of water and cook for 1 hour.

Personal Notes:
Pixie would make this while I was preparing fish to fry. We normally would plan for the fish to be ready about 5 minutes before the soufflé' and put the fish in an oven on the lowest setting to keep warm until the soufflé' was ready. This would be served with cold slaw, tartar sauce and a lemon wedge. Good!
