4 sole or flounder filets, 4 oz. each...
Kosher salt and freshly ground pepper...
Flour for dredging...
5 T of unsalted butter, cold and cut into Tablespoon-sized pieces...
2 T freshly squeezed lemon juice...
2 t water...
1 t of Italian parsley, chopped....
1 t minced fresh thyme.....

Directions:
Preheat 1 large non-stick skillet over medium-low heat for 5 minutes...
Meanwhile, lay filets on a piece of wax paper or parchment paper and blot dry with paper towels...
Season filets with S & P....if filets tend to taper down to a very thin tail, fold the tail under to make a more uniformed filet...
Put flour on a plate and dredge each filet in the flour, shake off excess flour...

Raise the heat in skillet to medium-high, add 2 T of butter, when butter stops foaming add the filets, rounded side down, lightly shake the pan, fry until golden brown about 2 or 2 and 1/2 minutes...
Turn off heat, flip filets and let filets finish cooking in the residual heat for another 2 Minutes...
Transfer to large plate and cover with foil, keep the filets warm...
Add the lemon juice to pan and water, too...add the remaining butter, 1 T at a time, a smooth creamy sauce is formed, stir in chopped parsley and thyme, season with S & P, pour sauce over filets and serve..
