For extra-crispy, melt-in-your-mouth bacon, don't fry it - cook it in the oven! Lay out your strips on a wire rack in a pan with some depth, such as a 9x13" cake pan (to hold the grease). Place on the top rack of the oven and broil on high. Keep the oven door open slightly, and watch it. Broil about 5 minutes on each side.

For extra flavor, you may want to add fresh-ground pepper or brown sugar before broiling. You will be surprised at how much more crispy the bacon is when cooked this way, and you can cook the whole package at once instead of filling your skillet several times.
