2 cups sugar
1 1/4 cups oil
4 large eggs
2 cups flour
2 teaspoons baking soda
1 Tablespoon cinnamon
1 teaspoon salt
3 cups grated carrots
1 cup chopped walnuts

Frosting:
12 oz. powdered sugar
2 - 3 oz cream cheese - room temperature
1 teaspoon vanilla extract
2 Tablespoons butter
2 Tablespoons milk

Directions:
Directions:
1. In a large bowl, beat sugar and oil.
2 Add eggs and beat well.
3. Fold in carrots and walnuts.
4. Sift together flour, soda, cinnamon and salt into egg mixture; mix well
5. Place batter in greased 9 x 13 pan. Bake for 45 minutes in 350º oven. (Check once because of oven variances.)
6. Frosting: Beat together powdered sugar, cream cheese, vanilla, butter and milk. And spread over cooled carrot cake. (add more walnuts if desired).
