2 cups flour
1 tsp salt
2 tsp baking soda
1 cup butter
2 cups white sugar
2 cups overripe bananas, mashed
4 eggs, beaten
1 cup pecans, chopped

Directions:
Directions:
Preheat the oven to 350 degrees.

Grease and flour two 9x5 inch loaf pans.

Mix butter and sugar until smooth. Stir in the bananas, eggs, and pecans until blended. Add flour, salt and baking soda and stir until mixed. Do not over-stir. Pour batter evenly into two loaf pans.

Bake for 60 minutes or until a knife inserted into the center of the loaf comes out clean. Cool for 5 minutes, then take loaves out of pans and leave to cool on a rack. Once cooled, store loaves in aluminum foil.

This bread gets a bit of crust on the outside that appears hard, but it is delicious because the butter caramelizes on the bottom of the loaf. So delicious!
