1 ready made 10" pie crust (deep dish is better). If you can make crust yourself you're awesome. I never got it right.
2 medium size sweet potatoes (about 1#) peeled, cubed and boiled until tender.
¼ cup butter
¾-1cup packed brown sugar
1½ tsp ground cinnamon
¼ tsp ground nutmeg
⅛ tsp salt
3 large eggs slightly beaten
1-12 oz can evaporated milk
whipped cream and ⅛ tsp nutmeg (optional)

Directions:
* Cook and drain potatoes. In large bowl combine potatoes and butter, beat with electric beater until smooth.
* Add sugar, cinnamon, nutmeg and salt. Beat until combined.
* Add eggs, beat on low just until combined. Gradually stir in evaporated milk.
* Carefully pour into pie shell. Cover edge of crust with foil.
* Bake at 400º for 10 minutes then reduce to 350º and bake 40-50 more minutes or until knife comes out clean.
* Cool for about 1 hour, serve warm. Top with whipped cream and nutmeg as desired.
* Refrigerate remaining pie.
