1/4 c butter
1/2 c brown sugar
1 1/3 c sifted flour
2 tsp baking powder
1/4 tsp salt
3/4 c sugar
Fruit-- pineapple or peaches are the most common

1/4 c butter (room temp)
1 beaten egg
1/2 c milk
1 tsp vanilla

Directions:
Directions:
Melt butter in 8x8 square pan. Add brown sugar & blend well. Remove from heat & arrange fruit slices.

Cream shortening, add dry ingredients, eggs &milk & vanilla. Stir until flour is dampened, then beat 1 minute by hand. Pour over fruit mixture.

Bake 50 minutes. Cool cake in pan 5 minutes, then invert on flat plate.

First thing made in home ec class. We used to have upside down cakes a lot. Most were made by my Grandmother, but sometimes Granny. Best topped with whipped cream or ice cream.
