1 lb wild shrimp, shelled deveined and boiled in beer
5 hard boiled eggs, chopped
1½ cups celery diced
mayonnaise
salt and pepper to taste

Mix using just enough mayonnaise to hold it together and serve on lettuce leaves with tomato wedges and saltine crackers.

This is a great summer lunch. Always use wild shrimp. The flavor difference is incredible! When I was small and shrimp were 35 cents a pound, my mom would cook this often. My mom was very frugal. Once when she was visiting in Fort Walton Beach, I took her to Morrison's Cafeteria to eat. I swear she was not going to eat anything because she thought everything was too expensive. When we came to the shrimp cocktails, one of the numbers had fallen off of the price and it looked like 35 cents. She asked me if that was correct and I told her it was, so she had one for lunch. In her defense she had lived through the great depression.
