1 1/2 c brown sugar
1/2 c shortening or butter
1 egg
1 c milk
1 tsp vanilla
1 tsp soda
2 c flour
1 1/2 c fresh rhubarb or more - I usually use at least double
sugar/cinnamon mixture

Directions:
Directions:
Cream sugar & shortening. Beat in egg. Add milk. Add dry ingredients. Stir in rhubarb.

Pour in pan. Top with generous portion of sugar & cinnamon mixture.

Bake in 9x13 or 10x15" greased pan. I prefer the larger pan. Double recipe can cook in a full sheet cake pan. Thinners with more rhubarb is the best.

Bake 350 for 35 minutes

Since I got this in 1974 I still make it every time i can get my hands on rhubarb. I make a double cake in my huge pan for family celebrations.
