1/8 tsp. salt
2 egg whites
2 ½ c. sugar
1 tsp. white vanilla
⅓ c. white corn syrup
⅔ c. water
Pecan halves

Directions:
In a saucepan, combine salt, sugar, corn syrup, and water. Cook over low heat and stir to dissolve sugar. Bring to a boil. In the meantime, beat egg whites in an electric mixer until stiff (Kitchen Aid or other heavy duty mixer is best). Continue boiling syrup until it reaches 230° on a candy thermometer or until it spins a thread when dripped from a spoon. Then pour syrup very slowly over the egg whites. Continue beating until the mixtures loses its gloss and begins to hold its shape. Also, listen for a change in the sound of the mixture against the bowl. There will be a distinctive flopping type sound when it is ready. Depending on the humidity, this can take between 6 to 15 minutes on medium speed. Once you reach this stage, add vanilla and be prepared to work quickly to drop on waxed paper. This is easier with two people, but if working alone, work from the bowl first, then tackle the beater. Top with a pecan half. This candy will not harden if it is raining, so try to make this on a sunny day.
