1½ lbs hamburger
1 onion chopped
4 carrots chopped
3 celery stalks chopped
½ c barley (substitute 1 package frozen riced cauliflower for GF version)
1 (28 oz) can diced tomatoes
2 c water
3 c beef broth
1 can condensed tomato soup
1 bay leaf
1 tbsp parsley
1 tsp garlic powder
½ tsp thyme
black pepper to taste

Directions:
- brown beef in electric frying pan, once browned, rinse in sink with hot water and strainer to remove grease
- return beef to stock pot
- stir in onion, carrots, celery, (barley or cauliflower), diced tomatoes, tomato soup
- pour in water, and beef broth
- season with bay leaf, parsley, garlic, thyme, and pepper
- bring to a boil and then reduce heat
- simmer for 2 hours
- remove bay leaf before serving
