100 g butter, softened
175 g caster sugar
1 egg
150 ml fresh milk
225 g self-raising flour
75 g soft brown sugar
1 tsp cinnamon
50 g chopped walnit pieces

METHOD
1. Cream 75 g butter and the caster sugar until light and fluffy. Beat in the egg and milk and carefully fold in 200 6 flour
2. Rub together the remaining butter, flour, brown sugar and cinnamon. Add the walnuts
3. Spread half the cake mixture in a greased 28 x 18 cm (11 x 7 inch) cake tin. Sprinkle with half the nut mixture, top with the remaining cake mixture, then the remaining nut mixture
4. Bake at 180ºC/160ºC fan for 35 to 40 mins. Cut into 16 slices whilst still warm
