225 g plain flour
2 tsp mixed spice
1 tsp bicarbonate of soda
225 g wholemeal flour
175 g butter
225 g soft brown sugar
225 g mixed dried fruit

TO DECORATE (OPTIONAL)
Crushed sugar cubes

METHOD
1. Sift the plain flour, spice and soda into a bowl. Stir in the wholemeal flour
2. Rub in the butter until the mixture resembles fine breadcrumbs. Stir in the sugar and fruit
3. Make a well in the centre and add the beaten egg and enough milk to give a dropping consistency.
4. Grease and line the base of a 20.5 cm (8 inch) square baking tin. Pour in the mixture, levelling off the top. Scatter the crushed sugar cubes over the top
5.bake at 170ºC/150ºC fan for 1 hour 40 mins or until an inserted skewer comes out cleanly. Cool on a wire rack before serving
