225 g butter, softened
225 g caster sugar
3 eggs
350 g self-raising flour
Pinch of salt
200 ml fresh milk
25 g cocoa powder

METHOD
1. Cream the butter and sugar until light and fluffy. Add the eggs, one at a time, beating well. Fold in the flour, salt and sugar
2. Divide the mixture between two bowls. Fold the cocoa powder into one, mixing well
3. Spoon the mixtures alternatively into a well greased 20.5 cm (8 inch) deep cake tin, to give a "marble" effect
4. Bake at 170ºC/150ºC fan for 1½ hours until well risen. Check with a clean cocktail stick, if it comes out clean it is cooked. If not, return to the oven for 5 mins and check again
5. Cool and turn out on a wire rack. Store in an airtight tin
