Pie Crust (make it or buy it)
4 eggs
1 medium onion
1/4 lb.chopped vegetable (broccoli works nicely)
1 1/2 cups milk
4 tbs. flour
1/4 tsp. salt
1/2 tsp. dry mustard
Paprika
Salt
Pepper
Thyme

Directions:
1. Sautés the onion and vegetable in butter, salt, pepper, and thyme to taste.

2. Make a custard:
Beat well together:
- eggs
- milk
- flour
- 1/4 tsp. salt
- 1/2 tsp. dry mustard

3. Pour custard over the veggies

4. Sprinkle with paprika, bake at 375º40-50 minutes, or until solid in the center when jiggled.

Kids seem to like this better when we substitute cheddar cheese for the Swiss.

Susan seems to like it better with shallots in here somehow.
