1 cup mayonnaise....
4 t apple cider vinegar...
5 T honey...
2 t poppy seeds...
1/4 t fine sea salt...
1/4 t freshly ground black pepper...

Salad
2 pon boneless, skinless chicken breasts...
3/4 cup pecan pieces, toasted...
2 cups seedless grapes, halved....
3 stal o Leroy, thinly sliced...

In a large bowl combine, mayonnaise, vinegar, poppy seeds,S & P, refrigerate until ready to use....it can be prepared up to 2 days in advance....

Preheat oven to 375º..
Place chicken breasts in one layer in a asking dish with 1/2 cup water, you can add S & P, I don’t...
Cover with foil and bake 25 minutes or until chicken is completely cooked through....
Remove chicken from baking dish, cool at room temperature for 10 minutes, then cover and refrigerate until completely cooled...
When chicken is cold, dice into bite size pieces and put into bowl of dressing, add the pecans, grapes, celery...
Stir gently, arrange a rib of Romain lettuce on a plate, fill with chicken salad, enjoy...
