50 g butter
1 medium onion, finely sliced
2 dessert apples, peeled, cored and sliced
1 kg red cabbage, finely sliced
100 g sultanas or raisins
200 ml sherry vinegar
salt and freshly ground black pepper

METHOD
1. Melt the butter in a saucepan or flameproof casserole over a medium heat (an aluminium pan will not work for this)
2. Fry the onion in the butter for 3 mins, then add the apples and cabbage
3. Cook for 5 mins or so, until softened, then add the sultanas and the sherry vinegar
4. Place a lid on the pan and cook for 1 hour, until the vegetables are just tender
5. Season to taste with salt and freshly ground black pepper and replace the lid. Continue to cook until the cabbage is tender and all the liquid has evaporated. The dish will keep for several days, covered, in the fridge. Simply heat up again when ready to serve.

We always make this as part of Christmas lunch, it is great as it can be made the day before and simply re-heated on the day. This recipe says it serves 8 but makes loads. We re-heat the leftovers again for Boxing Day!!
