6 ounces thinly sliced red onion
1/2 cup white vinegar
1/2 cup olive oil
3 tbls fresh basil
1 clove garlic
1/2 tsp salt and pepper
6 medium tomatoes, thickly sliced
6 ounces Mozzarella cheese


Directions:
Directions:

Place the onions in small bowl

In sauce pan bring vinegar to a boil, pour over onions, let set until cool

When cool, drain vinegar from onions into blender. With machine running add olive oil in a slow steady stream and mixture is pale and creamy.

Add garlic, basil, salt and pepper, Process a few seconds more.

Place tomato slices on individual serving plates ,place onion on tomatoes, add cheese, drizzle vinaigrette on just before serving
