2 Frozen Puff Pastry Pie Crusts
5 eggs
1 can sweetcorn (cream corn)
300 ml heavy cream
3/4 cup Parmesan Cheese
3/4 cup Mozarella Cheese
3/4 cup Cheddar Cheese
Vegetarian bacon - 1 package
Cajun Seasoning (to taste)
Ms. Dash Original Seasoning (to taste)
Salt & Pepper (to taste)

1. Preheat oven to 400º F
2. Blind bake pie crusts for 10 min.
3. Cut bacon into bite size pieces and pan fry.
4. Beat eggs, add spices, heavy cream, corn, cheese and fried bacon and mix well.
5. Pour mixture into pie crusts and bake for 40-45 minutes until brown and filling is set

Bekkies, came up with this recipe just for you to support you in being vegetarian. It started with an actual recipe, but as I always do I didn't follow the instructions completely. Ended up being one of our favourite dishes.
