Ingredients:  
1/4 cup butter
1/2 cup brown sugar (packed)
1 can sliced pineapple
handful of dried cranberries

Cake Batter
1 1/4 cup flour
1 cup sugar
1 1/2 tsp. baking powder
1/2 tsp salt
3/4 cup milk
1/3 cup shortening
1 egg
1 tsp. vanilla

Measure batter ingredients into large mixing bowl. Blend. Beat 3 minutes high speed.

Heat oven to 350º. Melt butter, pour into round layer pan. Sprinkle with brown sugar over butter.
Place pineapple slices in pan with cranberry in center of pineapple. Pour cake batter over fruit. Bake 35 to 45 or until toothpick comes out clean. When done loosen edges with knife, invert onto plate. Leave pan over cake for a few minutes to let fruit drop.
