Ingredients:  
1/2 cup chopped onion
2 stalks celery chopped
1-2 small carrots diced
1/4 cup butter
1 1/2 Tbsp. flour
1 1/2 Tbsp. curry powder
4 cups chicken broth

Sauté onions, celery, carrot and butter in large soup pot. Then add flour and curry cook for 45 minutes more. Add chicken stock, mix and bring to boil. Then simmer for 1/2 hour.

Then prepare and add items below.

1/2-1 small apple chopped
1/4-1/3 cup raisins
3-4 small potatoes peeled and chopped
1 skinless, boneless chicken (cubed)
salt to taste
ground black pepper to taste
1 pinch of ground thyme
1/2 cup heavy cream

Add to soup and simmer the above again for 15-20 minutes or until potatoes are done, add heavy cream.
