3 pounds boneless skinless chicken thighs fresh or thawed (do not use frozen)
1/4 cup grated Parmesan Cheese
16 oz. Olive Garden Italian Dressing (2 cups)

Directions:
1. Pour 1 cup Olive Garden Dressing into bottom of Instant Pot.

2. Add chicken thighs to instant pot.

3. In medium mixing bowl, stir together remaining 1 cup Olive Garden dressing and grated Parmesan cheese until well combined.

4. Pour Dressing/cheese mixture over chicken.

5. Select "Meat/stew" setting, select "High Pressure" and change cooking time to 15 minutes.

6. Preheat will start about 10 seconds after settings are selected.

7. Once Chicken thighs are done. Quick release pressure before removing lid.

8. Allow to cool for 5 minutes with lid off. Shred chicken with 2 forks (or Pampered Chef shredder) or you can serve as whole thighs.

NOTE: In addition to cook time, it will take approx. 15 minutes to initially reach pressure before cook time begins. IF you are using a Crock Pot Pressure Cooker, select the "Bean/Chili" setting to manually override cook time and pressure settings.
