2C Long grain rice
2 Chicken Broth - 10oz tins
1 Small onion - chopped
2T Butter
1/2 C Frozen or Fresh Peas
1/2 C Chopped Carrots
1/2 C Chopped Red Pepper
2 T Butter

Directions:
Directions:
1. Saute onion in butter until translucent
2. Add rice and stir briefly
3. Add chicken broth and bring to a boil
4. Once mixture is boiling turn off the heat and let sit and continue to cook for 20 min.
5. Place cooked rice, peas, carrots and red pepper and butter in large wok or saucepan.
6. Stir-Fry on high heat until cooked through - if you can get the rice somewhat crispy that is a good thing.
