2 Chicken Breasts - sliced and half butterflied into two thinner pieces each. You will have 4 pieces.
1 Egg - beaten
1 1/2 t Kosher Salt
Black Pepper to taste
1/2 C Cornstarch
2 C. Panko Bread Crumbs
1/4 C Flour
1/2 C Freshly squeezed lemon juice
1/4 C Sugar
2 T. Cornstarch
2/3 C Water
Directions:
Directions:
1. Add the egg, salt, pepper to a bowl and mix well.
2. In a separate plate or pie plate add the cornstarch and flour - mix well
3. Place the panic crumbs in a third plate
3. In a large frying pan or wok heat the oil to 375º (medium high heat)
4. Dip the chicken pieces in the cornstarch mixture - then the egg, then the Panko crumbs and then fry in oil 3 to 4 minutes until lightly brown and crisp.
5. Remove the chicken from the pan and drain the oil.
6. Add the lemon juice, sugar and water and cornstarch to the pan and whisk to combine.
7. Cook until thickened and smooth.
8. Slice the chicken into thin strips and serve with the lemon sauce poured over.
