1 c oil
2 c sugar (I have used as little as 1 c)
2 eggs
3 c applies (small chips)
1 c nuts and/or chocolate chips or both
3 c flour
1 t cinnamon
1 t soda
1/2 t salt (I use a pinch)
1 t vanilla

Directions:
Directions:
1. Stir together oil, sugar, eggs (by hand,no beaters)
2. Add apples, nuts, chocolate chips, vanilla
3. In another bowl, sift together flour, cinnamon, soda, salt,
4. Put all together and stir by hand - no beaters

Batter will be thick. Put into a lightly greased 9x11 cake pan. Bake at 350 for 50-60 minutes.

This is what we make when we pick too many apples in the fall! Best ever apple cake -simple, not too sweet (especially if you adjust the sugar).
