5 pounds potatoes
1/2 cup butter
2-3 tbsp flour or cornstarch
3-4 cups milk
3-4 cups grated cheese

1. Slice potatoes thinly

2. Make béchamel/cheese sauce:
-melt butter in heavy bottom pot that doesn't burn easily
-add flour and quickly stir adding milk slowly
-stir constantly until sauce has thickened
-lower heat and add cheese until melted

3. Assemble:
-spray 9x12 pan
-put sauce on bottom
-alternate layers of potatoes and sauce
-finish with sauce
-sprinkle with grated cheese on top

4. Cook at 350 degrees for about 45 minutes
-cover with foil if top is getting too brown
