2 sleeves of graham crackers, crushed
1/2 cup sugar
1 stick butter. melted

2 8 oz. cream cheese softened
1/2 cup powdered sugar
2 8 oz. Cool Whip


Glaze:
1 1/2 cup water
1/2 cup sugar
6 TBSP cornstarch

6 TBSP strawberry Jello
red food coloring

Mix graham crackers, sugar , and butter. Can add a little more butter if dry. Press this into the bottom of a 9 x 13 pan.

Mix the softened cream cheese, 1/2 cup powdered sugar until creamy. Fold in the cool whip. Can use more of each if you would like a thicker filling layer or a bigger pan. Refrigerate

To make the strawberry glaze:
Mix the water, sugar, and cornstarch in a saucepan. Cook on medium heat, stirring until thick. Stir in the jello and the red food coloring. Cool completely in refrigerator.

Slice up as many strawberries as you would like. Stir in the glaze. Pour over the cream cheese layer. Refrigerate until ready to serve.

I have made this with fresh raspberries as well. Just substitute the strawberry Jello with raspberry flavored and fresh raspberries. I have also used Raspberry pie filling for my glaze with the fresh raspberries. You can also cheat on the glaze and buy the store bought stuff in the fruit section.
