French Onion Soup Recipe

3 lb Onions
6 Cups Beef Stock
2 tbsp Flour
Olive Oil
French Baguette (Day-Old)
Gruyere Cheese
Dry Sherry
Fish Sauce (Optional)
Soy Sauce (Optional)
1 Garlic Clove

Directions:
Directions:
1. Cut the ends off all of the onions and slice thinly, pole to pole.

2. Add olive oil to a large dutch oven over medium-high heat.

3. Add all the onions and cook slowly until they are jammy and golden brown, with a dark brown fond developing on the bottom of the pot.

4. Deglaze with Dry Sherry (or wine) and use a wooden spoon to scrape up fond from the bottom of the pot.

4. Add beef stock and splash each of fish sauce and soy sauce (optional)

5. Bring to a boil, then cover and simmer for 20 minutes

5. Slice the baguette and drizzle with olive oil and salt and pepper.

6. Broil the baguette and the rub each piece with a halved garlic clove.

7. Ladle soup into oven-proof bowls, and float toasted baguetter pieces on the top.

8. Cover in Gruyere cheese and broil for about 5 minutes until cheese is golden brown

Delicious and dead easy. We used red wine to deglaze but I think sherry is most traditional, and you could use white wine as well (we only had red on hand).

We also used mozzarella cheese but I think Gruyere would have been much better.
