Directions:1. Peel and grate the potatoes, intermixing with the white onion so everything mixes properly.
2. Pour the mixture onto a clean kitchen towel and ring out all the water (should yield about ½ C water)
3. Allow the potato water to sit in the bowl for 5-10 minutes until starch separates, then discard water.
4. Crack eggs into the bowl with potato start and beat together.
5. In a large bowl, combine the egg mixture and potatoes and add 1 C panko breadcrumbs. Add more egg is the mixture is too dry.
6. Press the mixture into balls and flatten out into patties.
7. Fry the patties in a shallow skillet in vegetable oil at 375ºF for about 5 minutes per side.
8. Drain onto a wire rack and salt immediately.
9. Top with Greek Yogurt and Parsley or with the Toppings of your choice.

Notes: Another great recipe from Binging with Babish. Had this with our Chicken Fried Steak and it was a bit too much grease, but I thought the Latkes were the highlights of the meal.
We served just with Greek Yogurt and Parsley, but would love to try more of those topping options.
