Pepperoni and Sausage Calzones Recipe

FOR THE DOUGH:
360ml Tepid Water
3g Active Dry Yeast
2g White Sugar
600g Bread Flour
6g Kosher Salt
Vegetable Oil

FOR THE FILLINGS:
Mozzarella Cheese
Pepperoni
Cooked and Crumbled Italian Sausage

FOR THE DIPPING SAUCE:
1 28oz Can San Marzano Tomatoes
½ Small White Onion
2 Cloves Garlic
1 tsp Dried Oregano
1 tsp Dried Basil
1 tsp Red Pepper Flake (Optional)

TO MAKE THE DOUGH:

1. In the bowl of a Stand Mixer, mix together Water, Yeast, and Sugar, cover with plastic wrap, and allow to bloom for 10 mins.

2. Add Flour and Salt, and knead on Medium speed for about 5 Minutes

3. Divide dough into 4 portions and stretch into a taught ball.

4. Place Dough Balls into well-oiled bowls and cover with plastic wrap.

5. Ferment dough in the fridge for 2-3 Days


TO MAKE THE SAUCE:

1. Combine all ingredients in a blender and pulse to combine.

2. Add the sauce to a small saucepan and cook on the stove for 15-20 minutes. Add a small amount of water if the sauce is getting too thick.


TO ASSEMBLE THE PIZZA:

1. Remove dough ball from the fridge and place on a well floured surface. Roll out about 10 inches in diameter.

2. On one half of the dough, add your desired toppings, plus a little sauce if you like.

3. Fold one half of the dough onto the other and use a pizza cutter to seal shut.

4. Place a pizza stone in the middle of a 500ºF oven and preheat.

5. Add a small amount of cornmeal to a pizza peel and slide 2 calzones onto it.

6. Slide the calzones onto the pizza stone and cook for 10-20 minutes, rotating once during cooking.

7. Remove from oven and slice in half, then serve.

Probably the most delicious thing I've ever made. Fermenting the dough in the fridge made a WORLD of difference, and the pizza stone got it nice and crispy!

We used pepperoni and sausage with mozzarella cheese as the fillings but feel free to mix and match!
