1- Medium Eggplant ( remove skin )
2- 3 Zucchini sliced in 4 strips
3= 1 Yellow Squash peeled
4- 1 bag of spinach
5- 1 Yellow, orange, Red bell peppers ( optional )
6- 1 cup of Bread crumbs
7- 1 brick of Mozzarella shredded
8- Tomato Sauce
9- oil
10- Parmesan cheese

In an aluminum pan brush the bottom with oil. Add 1 layer of eggplant then sprinkle some parmesan, and mozzarella cheese. Next add a layer of the yellow squash topped with the 2 cheeses, next add the Zucchini topped with the 2 cheeses. After layering all the vegetables and cheeses top with the spinach leaves, more cheese and end it off with tomato sauce and bread crumbs.
Bake in oven for about 90 min.at 350º. When all is cooked let stand for 15 min. before serving.
