FOR THE DRESSING:

1 Lime, Juiced
3 tbsp Peanut Butter
2 tbsp Soy Sauce
3 tsp Honey
2 tsp Fish Sauce
2 tsp Rice Vinegar
1 tsp Sriracha


FOR THE SALAD

½ Napa Cabbage, Sliced Thinly
¼ Small Red Cabbage
2 Medium Carrots, Shredded
3 Green Onion, Sliced
¼ C Cilantro, Minced
2 C Cooked Chicken Breast (in chunks)
3 tbsp Slivered Almonds

TO MAKE THE DRESSING:

1. Combine all ingredients in a small glass bowl, and whisk to combine.

TO MAKE THE SALAD:

1. Combine all ingredients except the almonds in a large Salad Bowl.

2. Toss with Dressing and plate up on two small salad plates

3. Sprinkle Slivered Almonds over top, and garnish with cilantro or a lime wedge.

4. Serve

Another quick and easy recipe that really is greater than the sum of its parts. Cabbage is nice and crunchy and the dressing is fantastic!
